Ah, the beloved Luobo Jiaozi! They say it's a seasonal delicacy, only available during the autumn and winter months when the white radishes used to make it are at their best. Lucky for me, I happened to be in Yichang on business at just the right time to enjoy this flavorful treat!

There's this aunty who always sells Luobo Jiaozi from her cart. So when we reached the spot and saw her pushing her cart, we hurried over to take a closer look. Lo and behold, this was the very stall we'd heard about - Hu Jie's Luobo Jiaozi! Needless to say, we bought three of them right away.

The boss makes them fresh, right before your eyes. The filling is a mixture of grated red-skinned white radish, salt, ginger, garlic sprouts, chili powder, Sichuan peppercorn, and chopped cilantro. They use a unique "dumpling shovel" shaped like a three-dimensional moon to cook it all up. You can even watch the entire process - it's completely transparent!

First, the boss dips the shovel into oil in the pot, then adds the mixed batter to it. Next, he uses chopsticks to add the filling to the dough and continues pouring more batter over it until everything is evenly coated. Finally, he fries everything up until the Luobo Jiaozi turns a beautiful golden color. Be sure to take a bite of the large, piping hot Luobo Jiaozi while it's still fresh - its crispy outer covering and soft, juicy filling are a unique experience you won't want to miss. And if you're still feeling hungry, they even have mini Luobo Jiaozi, as well as versions filled with pork and beef. With so many mouth-watering options, there's bound to be something you'll love!
